Makes: About 20 crostini 

If you want to really make these into a splashy appetizer, seek out a jar of truffle honey. But if regular honey is what is in your pantry (or in your budget!) then you’ll still be very happy.

Ingredients List 

  • 1 baguette, sliced 1/3-inch thick (about 20 slices)
  • 1/4 cup olive oil
  • Kosher salt to taste
  • 1 tablespoon extra virgin olive oil
  • 2 just ripe pears, quartered cored, and thinly sliced lengthwise
  • 10 very thin slices prosciutto, cut in half lengthwise
  • ½ cup crumbled goat cheese
  • 1 to 2 tablespoons honey

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or aluminum foil.
  2. Brush each of the baguette slices with the olive oil and place them side by side on the baking sheet. Sprinkle lightly with salt.
  3. Bake for about 5 minutes until the edges are lightly brown. Remember that they will harden as they cool, so take them out before they get too crisp.
  4. Place one or two thin slices of pear on each crostini, then fold a piece of prosciutto over the pear. Top with a bit of goat cheese, then a few drops of honey. Lightly sprinkle with a bit more salt.
