Every year, right around this time, a surge of stories about what to do with that overabundance of summer produce hit the airwaves.  And why?  Because we are all trying to figure out to do with the embarrassment of riches our gardens or farmer’s markets have thrust upon us, and we need HELP!  And we want to go beyond the usual fare.  Here are 5 recipes for 5 kinds of the most ubiquitous late summer produce.

Zucchini: You quickly go from “Look, I have a few small zucchini growing!” to “OMG, what I am I going to do with all these green missiles?”  The great news: zucchini can easily take their place in everything from salads to stir-fries, baked goods to frittatas.  Thinly of thickly slice zucchini, dice it, cut it into matchsticks, or use a vegetable peeler and create delicate strips, and add to any kind of tossed salad.

Tomatoes: A bumper crop of tomatoes is beautiful to behold.   But then what?  Big batches of homemade tomato sauce are great to freeze in quart containers for fresh pastas all winter long.   And there’s nothing wrong with a simple sliced tomatoe salad, maybe with some sliced mozzarella and basil layered in.  Or….

Eggplant: Those beautiful purple orbs call out to us in the farmers’ markets…and not just the purple ones; there are all kinds of varieties of eggplant, white, striped, Japanese, babies.  They are delicious sliced, brushed with olive oil, grilled up and sprinkled with fresh herbs.  But don’t stop there.
